Duck Eggs can be cooked and used an ingredients as you would chicken eggs. Once of the main differences in the use of duck eggs is their higher protein content. Also when beating egg whites in duck eggs it takes slightly more effort to break, in part due to them being more fresh in general.

 

Hard Boil Duck Eggs

duck eggs irelandHard-cooked duck eggs are similar to hard-cooked chicken eggs, with duck eggs being slightly richer. Because of the extra protein in the white, it is particularly important not to overcook them.

To hard-boil duck eggs, place them in a pot, cover with cold water and bring to a boil. After boiling, remove the pot from the heat and leave to cool for approximately 12 minutes for large eggs. (slightly less for medium sized eggs) Drain the eggs and shake the pan vigorously to crack the shells; this lets them cool faster and prevents overcooking. Cover with cold water and let cool. Once cool, you can peel them. If you don’t eat them immediately, store them in a bowl in the refrigerator, covered with water.

 

Fried Duck Eggs

duck eggs irelandTo fry duck eggs use a heavy pan not much bigger than the layer the eggs form when broken into it. Start the cooking on medium-high and then turn the burner to medium-low right after the eggs go into the pan. Cover the pan and take it off the heat during the last part of the cooking. The white should be tender and succulent. If your fried egg has a dry or leathery white, you’ve overcooked it. (Try a lower temperature, a shorter cooking time, a smaller pan, or covering the pan or taking it off the heat for a greater part of the cooking.
